Simple Lemon Vinaigrette Dressing Recipe

This is so easy and sooo good!

My friend Gen came up with this one. (Look for more recipes from Gen in the future, he’s an AWESOME cook).
Lemon Vinaigrette Dressing Recipe

Ingredients:
4 lemons
1 tbsp honey
2 tbsps dijon mustard
salt and pepper to taste
1/2-3/4 cup of olive oil

Directions:
Blend the first 4 ingredients in a blender or food processor until combined. Then (while the blender or food processor is running) slowly drizzle in olive oil

Done!

Feel free to add more or less honey depending on how sweet you’d like this to be.

      You blend the whole lemon? This is my FAVORITE salad dressing. I eat a salad at lunch and dinner everyday with this dressing. I don’t even buy store dressing anymore, because SURPRISE: most of them contain HFCS! I don’t have a food processor so my trick is to put it all in a little jar and shake it up; makes for good portability, too.

      Sorry I wasn’t clear. Yes you blend the JUICE of four whole lemons. Thanks for the tip!

      I had a salad last weekend that came with balsamic vinaigrette and a balsamic syrup meant as a garnish – I just poured the balsamic syrup on, and it was DELICIOUS!!!! You can make it by simply pouring a bottle of balsamic vinegar int a pot and letting it boil for about 30-45 minutes until it reduces by about a third. After it cools, pour it into a bottle. I store it in the fridge! YUMMY on a salad, and you don’t need any oil!

      my husband is cleansing this week to prep for an elimination diet and this recipe works very well with what he is doing. I tossed it with spinach, avocado, and strawberries to accompany dinner.

      my standard is usually olive oil, white balsamic vinegar, whatever fresh herbs we have around, salt and pepper.
