Homemade Bread for Dummies Redux

I owe this post to Savvy reader Kichael, who commented on my original “Homemade Bread for Dummies” post with a bread recipe from Recipe Zaar that introduced me to quick-rising yeast! I altered it slightly, for the recipe below. Thanks Kichael!

Homemade Bread Recipe 2 (recipe makes one loaf)

Ingredients

* 2 1/4 cups all-purpose flour
* 1/2 tablespoon sugar
*1 teaspoons salt
* 1 packages fast rising yeast
* 1 cups hot water (125°-130°F)
* 1/2 tablespoon water
* cornmeal

Directions

  1. Set aside 3/4 cup of flour.
  2. In a large bowl, mix remaining flour, sugar, salt and yeast.
  3. Stir hot water into dry mixture.
  4. Mix in enough reserved flour to make a soft dough.
  5. On lightly floured surface, knead dough until smooth and elastic (about 8-10 minutes)
  6. Cover dough and let it rest for 10 minutes
  7. Roll dough into a 10×15 inch rectangle.
  8. Roll dough tightly (like a jelly roll), starting from the long side, and tapering the ends.
  9. Pinch ends and seam to seal.
  10. Place dough seam side down on greased baking sheet or loaf pan which has been sprinkled with cornmeal.

  11. Cover dough and let rise in a warm draft-free place until doubled in size (about 35-40 minutes
  12. Bake in preheated 425°F oven for 25-30 minutes or until done.
  13. Remove from baking sheets and cool on wire racks

Note: If you want to make baguettes instead of loaves, you can roll the dough into a rope (by hand) to get the longer thinner shape.

I let the bread rise on the dryer in my laundry room. That was the suggestion of FB fan Caitlin (thank you!) And it rose MUCH better than my original recipe.  After it baked, it made a nice-size loaf that was barely out of the oven before Sexy was cutting into it and smothering it with ramp butter we bought at a farmer’s market. I have decided that the only bread I going to eat is going to be the kind that I make in my own kitchen on Friday nights. :) Oh, and Leah, I’m trying your raisin bread next!

      There’s no oil in the recipe? I though tyou HAD to have oil…………. You inspired me, though, my first attempt came out great – trying again soon!

      That’s what I thought too! But this one came out great! It’s not sandwich bread, it’s the kind you eat with dinner.

    • Wow! Good job that looks tasty! I usually roll mine up like french bread for dinner. I’m a dipper I must admit I love red wine vinegar and olive oil. Sometimes I make two thirds of the flour whole wheat as well. I read all of my Nature’s Own bread ingredients and decided it wasn’t worth it. I will be baking bread weekly now as well I just need to find a really good sandwich loaf.

      Ok Savvy, I’ve been following your blog for quite some time. I must say IT SMASHING!!! Now have healthier hair, home and mind. Your post on bread making has brought me out to say Thanks!!! Loving the whole process. I tried to follow the recipe and remembered I’m a visual learner, so my first try, let’s say sure looked good:-( I found a video at http://www.cookingwithcandra.com/blog/2009/11/12/homemade-white-bread/ She explains this well and has great tricks, you can watch her movements to see how to knead the dough well. She also has a video called the windowpane set, to check if it’s kneaded well. I used all natural products and subbed each 1/2 cup warm milk & water, 1/2 cup brown sugar. I also put the dough in a high place to rise since heat rises, why not my bread. I also swirled it into a spiral or other cool shapes, but remember don’t leave small ends out or it will burn. All this to say, MUCH MUCH GRATITUDE to you. You are savvily saving this sista. YEAH!!!

You know what? Putting it up high make sense! Heat rises, and I won’t have to worry about the kitten taking a poke at the dough. Thanks so much!
